As many of you may know I’m a breakfast pusher.  I encourage all of my patients to prioritize a healthy breakfast.  I get asked what are some quick breakfast ideas, a lot.  So periodically I’ll feature some quick breakfast tips in my hot & healthy recipe contribution for Ascent.  These quick breakfast ideas are a great to tease into a busy workweek but should be a part of a balanced weekly breakfast plan (see my previous oatmeal and frittata recipes).  Also, just because this is quick and easy to make, doesn’t mean you should skip the cardinal rules of good eating hygiene – ie sitting undistracted, chewing your food thoroughly and not multitasking 🙂

Rice cake breaky

Gluten & dairy free
Time: under 2min to make 


  • 1 rice cake
  • 2 tbsp. of almond / pecan butter ( see my own recipe below)
  • 1/2 banana, sliced
  • 4 blackberries
  • Black strap molasses

Layer ingredients as per list, starting with the rice cake.  Caution, can be messy as rice cake crumbles easily.

Almond / pecan butter

2 cups of roasted whole almonds
1 cup of roasted pecans
2 tbsp. of almond oil

* I usually roast the nuts on a cookie sheet in the oven at 350 degrees Fahrenheit for 15min and let cool, can be done days in advance.

Add all ingredients to the vitamix or food processor and process until desired consistency.  With the vitamix I quickly increase to maximum speed and tamper down.

Why this is good

Rice cake – non gluten and anti-inflammatory grain.  Go with natural, no flavouring

Almonds / pecan butter – contains protein, vitamin E, fiber and good oils (mono-unsaturated), along with vitamin B2 and other mineral and vitamins.

Bananas – contain fiber, potassium, tryptophan

Blackberries – contain antioxidants like anthocyanin’s and Vitamin C, which are great for blood vessel health

Black strap molasses – great sweetening agent that contains iron and is considered warming and good for the Spleen – an organ vital for proper digestive capacity from a Traditional Chinese Medicine perspective. Also contains calcium and magnesium. Safe as a sweetener for diabetics.
